No grain breakfast man aka my new favorite breakfast!

Inspired by Elana’s Pantry, I made these breakfast men as a bread replacement during my no-bread-weeks. And a success it was! Ingredients for 4 servings: (If you don’t have cups, you can use these conversions.) • ½ cup almond butter • 2 eggs • 2 tablespoons honey or agave syrup • 1 teaspoon vanilla extract • 1 tablespoon of tagatesse • ¼ teaspoon salt • ¼ teaspoon baking soda • 1 teaspoon cinnamon • 1 handful of raisins (or cacao nibs, or berries, or walnut pieces or…) How to make it: 1. In a large bowl, mix almond butter with a hand blender until creamy. 2. Add all the other ingredients, except the raisins and mix well with hand blender until homogeneous. 3. Peanut kissed pumpkin-coconut soup

These cold days made me long for pumpkin soup, but I wanted to make it with a twist, so I came up with… Ingredients: • 1 big onion • ½ pumpkin • 250 g chickpeas (cooked) • 250 ml coconut milk • 4 tbsp of peanut butter, if possible 100% peanut • 2 tbsp of curry powder, I used the Aromatic Sharwood’s ‘Mild curry’ blend • 6 tbsp of soy sauce, I used the one from Kikkoman • A little butter • Salt, pepper, cayenne pepper, wasabi to taste Preparation: • Cut the onion in little pieces and fry in some butter. • Peel and dice the pumpkin (this is the hardest part). • Add the pumpkin to the onion when it becomes a little translucent. • Fill up with water (or broth for more taste). Need inspiration? Then I recommend my regain-inspiration-method: 1) Collect 1 to 3 ingredients you want to use and that are of course matching. I suggest to think of ingredients approaching expiration date, which should be eaten first. I gathered these ingredients as a basis: 2) Snoop around the kitchen to look for matching combos. Try to focus on veggies mainly. I gathered the following: Ingredients (for 2 persons): • 200g whole rice macaroni • 250 g paneer, the Indian version of tofu. • 3 tomatoes (or 6 if you want to replace the tomato sauce) • 1 apple • 250 g tomato sauce (I chose one with ricotta cheese) • A little butter • Spices: salt, pepper, celery, cumin, possibly fresh basil and chili or cayenne pepper. No sugar banana bread

A trio of almost overripe bananas smiled at me and I thought: I won’t eat you, cuz your texture became way too ‘sandy’ and you taste way too sweet. I’ll turn you guys into… a banana bread! And it became bread with some cake features. I used a basic recipe of ‘Voedzo’ and tweaked it a little with the following result. Ingredients: • 1/3 cup soy milk + 1.5 tsp apple cider vinegar • 3 bananas • 1/4 cup fat that can be heated, for example: sunflower oil, butter or coconut oil • 1/4 cup applesauce (mashed, no chunks) • 1/4 cup coconut milk or water (if you’ve already used coconut oil) • 1 tsp vanilla extract • 2 cups whole wheat flour • 2.5 tsp baking powder • 0.5 tsp salt • 1/4 cup oatmeal • 1/2 cup coconut…

Recipe: Refrigirator Oatmeal – breakfast idea for people with little time

Busy week ahead? Not much time for breakfast in the morning and certainly not something complicated & time-consuming? But you DO eat breakfast! (Do you?? *Gazes at you with her penetrating look*) -> Then I have this one for you … Ingredients: • Oat (preferably not instant) • Yogurt (I used plain yogurt) • Milk (I used skimmed milk, soy milk fine works too) • Chia seed (I purchased from Unlimited Health for example) • Fruit (what you love to eat, but vary) • Glass jars that are large enough and have a lid Preparations: • Step 1: Put oat in the jars. • Step 2: Add milk till oats are largely covered. • Step 3: Add as much chia seed as you wish. • Step 4: Add the yogurt. • Step 5: Close the jars. • Step 6: Shake…
